My wife and I love stuffed jalapenos, but my recipe is rather plain. I just stuff them with cream cheese, wrap them in bacon, and grill them. I was wondering if ya'll have some killer recipes you'd be willing to share.

Yes, I tried doing them in the oven due to a time limitation and they were not very good. Smoked them up per the recipe and they rocked.

Since I lost all my recipes on my desktop crash I'm trying to remember mine.

1. Half and clean all the peppers.
2. Make a mixture of cream cheese, small chopped/cubed sharp chedder, Italian Parsle and top with bread crumbs.
3. Bake in oven.

One of my favorite ways to do them.

These were pretty damn good but I gotta admit ABT's sound amazing too and 'better' for you since they're not fried! But just a little better... :-)

I have several versions, but of late I use some mexican cheese, Cotija. Half cut the pepper and remove seeds and membrane. stuff with cheese and wrap with bacon pinned with toothpicks. Cooking is your choice for this recipe, oven roast, grilled, or deepfried. I them all but really depends on mood, usually resulting in grilled.

I have a pretty simple but delicious method for the grill.

Cut peppers in half and remove seeds.
Fill peppers with cream cheese and scrape off excess cheese with a knife so that it is level.
Throw the peppers on the grill until they start to soften a little, then drizzle honey over them and cook for about one more minute.

The honey smooths out some of the heat ( I can eat at least 5-10 without even breaking a sweat) and combined with the cream cheese... oh God are they tasty!

I haven't tried it...but I've been meaning to try a mix of the cream cheese with smoked salmon when stuffing the peppers.

I like stuffing jalepenos with fresnos stuffed with serranos stuffed with cayanes stuffed with thai chilies stuffed with slivered habeneros.

But that's just me.
