This is AMAZING!

25 Oreo's
1 Stick Butter
1/2 Gallon of Mint Chocolate Chip Ice Cream
1 Can of evaporated milk (5 1/3 oz)
1C Powdered Sugar
6oz Chocolate Chips
Large Cool Whip

1. Crush all the 25 Oreos and combine with 1/2 stick of melted butter.

1a. Press 3/4 of the mix into the bottom of a 9X13 pan and freeze.

2. After freezing spread 1/2 gallon of Mint Chocolate Chip Ice Cream (softened) over the crust and freeze again.

3. Mix and bring to a boil 1 Can (5 1/3oz) of evaporated milk, 1/2 stick of butter, 1C Powdered sugar, and 6oz chocolate chips.

3a. Let cool and spread over ice cream - freeze until set.

4. Spread large bowl of cool whip over chocolate layer and sprinkle remaining crush oreo mix.

One of my coworkers makes an Ice Cream Cake that is similar to this, but uses different ingredients.

13X9 cake pan
2 boxes of ice cream sandwiches
2 bowls of Cool Whip

Layer the bottom of the pan with ice cream sandwiches
Place a layer of cool whip on top
(optional) toss some M&M's, nuts, or fruit pieces on top of the cool whip
Place another layer of ice cream sandwiches on top
More cool whip
etc... ( you might be able to get three layers of sandwiches in the pan, depending on how tall the sides are.

When finished, place pan back in freezer to freeze
Cut and serve.

We had this on Monday, for an anniversary lunch, and it's a quick and easy summer-time dessert.

I'm gonna print the OP out for her and my wife though.... :-)

Yeah but ya need it as a binder for the Oreo crust. Also a half a stick for a whole casserole dish is not a lot.:-)
