Saw this the other night - bacon wrapped habanero stuffed with a scallop. The chef baked hers, but I'm thinking grilling would work also. Gonna try this Sunday.

That sounds good, but didn't the habanero overwhelm the scallop? Also, grilling outside is probably a good idea; without professional grade ventilation, cooking with habaneros will nuke your whole house.

She took out the seeds and membrane, so it wasn't full strength habanero. Guess you could use any pepper that would house a scallop, or shrimp, or cheese...

Shrimp and cheddar wrapped in a sweet banana pepper would be incredible.
I used to do cheddar-filled bacon wrapped hungarian wax peppers and jalapenos on the grill, it's been awhile. Never crossed my mind to add shrimp. That'd take it over the top. :-)

and built a bigger one out of a piece of stainless at work.
These done with whatever you prefer for stuffing are GREAT !!:-)
I like using shrimp and cheddar, with a bacon cap:-):-)
Gonna have to try Scallops.:-)
