You can serve this over rice, or drape tortillas over an oven-safe bowl and bake to create taco bowls.
Top with cheese, lettuce, sour cream, salsa.
Fired up the crockpot about an hour ago. I knew I hadn't made this recipe in a while, but had no idea it's been almost a year and a half. The apartment smells sooooo good already.

Last night was a dinner at church provided by a catering service.
some of the best mashed potatoes and gravy I've ever eaten, baked chicken breast marinated in italian dressing, some type of roast with asparagus, and corn. It was pretty good!

Last night was homemade barbecue (not true barbecue). Pork loin with Budweiser smokey barbecue sauce in the crockpot for four hours, then the pork loin was taken out and shredded and put back in the crockpot for another four hours. Delicious!
I call it barbecue, but it's more like ghetto style pulled pork. Nothing like good ol' NC and SC style barbecue.

My wife made her own version of Fra Diavolo with Calamari, scallops and red snapper fillets over fresh made pasta!!! The spice in the sauce came from serano peppers I grow in my garden.
Yes my wife is a chef by trade!!! Yea me! That is also why I gained weight in the past year!
