Good Eats>Pho!
jquirit 12:28 AM 03-26-2009
Well, my ex-coworker and his wife raved about it. Came out very good. I was happy with the results. Though next time, I need to remember to soak only half of a package of banh pho noodles (an entire package is TOO much).

So the dish consisted of my pho broth, noodles, viet meatballs with tendon inside, thin sliced (raw) top round, the simmered oxtail meat from the broth, Thai basil, bean sprouts, a squeeze of lime, a bit of hoisin sauce, and a bit of Siraccha.

So freaking good. Now my belly is full and content.

Well, I did invite Andy, his wife, and his kid... but they didn't make it. :-)

And it's great pho. Not just good. Oh, and here's an interesting tidbit. You know, when you refrigerate the broth, it turns into gelatin? Found that out when I took out a small bowl of broth I refrigerated so I can have another bowl tonight for dinner.

:-):-):-)

Ive heard of thai tea, hell at the old thai restaurant i worked at we also had Thai coffee, Uber brewed coffee with evap. milk... etc

same thing?
Yeah I guess similar. Like Mugen said it's this metal thing over a cup with evaporated millk. The coffee drips slowly in. You get this very concentrated brew. Good stuff. You can buy the coffee, I think most places uses Cafe Dumonde...not sure if I got the spelling correct.

this is true :-) its what gives broth that.. well.. thick mouth feel even though it is still stock/broth...both meat and bones, compared to water.

Bones have HIGH gelatin content :-)

miss ya brotha, if only you lived in the middle of the U.S.. i would be driving past you place all the time !

NOW whats this recipe.. and how does it battle against your fav. pho house...

It's very comparable to what I've had at my local restaurants. This recipe came out a bit more sweeter than I had expected. Maybe from using regular granulated salt instead of the raw sugar, so next batch I'm gonna cut back on the sugar. But, none the less, it was very savory and delicious! You gotta make this Sammy, and tell me how yours comes out.

I found a pho place near my work! I've eaten there like ten times, although the last time I did get ill immediately after.

I went for dinner. No good. Service sucked and pho was not very good at all. :-)

HA! Just saw this thread and loving it!

I've tried to get a few of my buddies to try this and they all turn up their noses... their loss. Now that fall is starting to move in I'm looking forward to eating this more, there's a great Vietnamese place within 1/2 mile of my house.

I love it with the rate steak and brisket... I can even do the tendon and tripe occasionally. :-)

Extensive menu to me means they don't concentrate on the Pho.

[I can even do the tendon and tripe occasionally.]

Me too Tim.
