Guess you kind of know what path you are starting to head down. :-)

Remember, even though the job market isn't good....there are jobs out there. Good chefs are hard to find! Promote yourself.

Sounds like you have two good areas to look in Miami and Atlanta. Let everyone know you are looking......sometime doors open when you least expect it!

If you are planning on pursuing the personal chef -clothing optional option I would suggest sticking with S. FLA......climates warmer!! :-)

To answer all.

The do what your wife says is still a good idea.
It was a nice local place, big portions, good prices.
It was my first of this kind, i've almost always done 4-5 diamond type places. Ritz Carlton, Four Seasons, Mandarin Orientals those types of places.
And i've actually been to two of Gordon Ramseys places in London and they're a chefs dream.
Thought about exec chef at a really nice gentlemens club :-)
