Warren, find yourself in SoCal sometime and I'll take you to Taps Fish House and Brewery. Been to brunch there many a time when brunch turns into a spontaneous Herf! They brew some great beers too
:-)

That Bell's 9000 is very strange. Drinks like a sweet beer and finishes like a port.

The owner at my favorite bar is doing the same thing. I'm very interested in seeing what happens to this beer.

That is interesting. The good part would tasting after aging. The hard part would staying out of it! I may try this with a couple bottles of the Red Chimay, just for a few months or so.

I live in CA, we don't have basements or anything similar to a cellar. What would you guys recommend as a means of storage?

I got some 08 Chimay put away and some Founders Backwoods Bastard. I also plan on putting some favorite seasonal beers away not to age but to get be through till it comes around again. I forgot to stock up Ale Asylum Satisfaction Jackson this year.
:-)
Enjoying a Lake Louie Warped Speed Scotch Ale.

Any utility room or closets that might be not on an outside wall? They might be a bit cooler then the rest of the home.

I just keep mine in a bottom cabinet in the kitchen that is away from the stove and the air duct, it stays about 60-65 degrees. I would love to be cooler but it seems to be ok
