Pineapple glazed pork loin
makes 4-6 servings
1 ¼ lb to 1 ½ lb pork loin or tender loin
glaze:
1 can (8 ½ oz) pinapple rings, keep juice
1 tsp dry mustard
½ tsp ground ginger
1 tbsp brown sugar
1 tbsp lemon juice
2 tsp cornstarch
place loin on a rack in a baking pan
make glaze: Drain pinapple and keep ½ cup of the juice. In a small sauce pan
mix 1/3 cup pinapple juice, mustard, ginger, paprika, brown sugar, lemon juice and cornstarch. Constantly stirring until boiling. Set aside
brush pork with part of the glaze. Bake uncovered at 350 degrees for about 1 hr and 15 minutes. During baking you will want to brush on glaze several times. When pork is cooking for about 1 hr turn pork over and brush on glaze. After 10 minutes brush pork with glaze again. After cooking. Let meat stand for 5 minutes, but give meat anoth brush of glaze.
Slice meat across grain and place pinapple slices around pork on serving platter.
