I'm no expert, but the best one I've had used Agave nectar rather than simple syrup.

Great summer drink. I live in the South, so a Mint julep or Mojito always hit the spot. My grand mother grow her own lime and mint.

Heh.

Ya need a good narrow mojito glass so that you can muddle properly first.

Then,

-A little more than a tablespoon of sugar, I prefer refined over raw
-6 or 7 good, fresh mint leaves
muddle

-juice of a 1/2 lime
muddle more

-a good pour of rum...out of a handle, 5 or 6 gurgles
--I typically use Appleton or Mount Gay white rum
-mix well with a spoon
-fill the glass to rim with ice
-top off with seltzer
-stir again with spoon

My mojitos rock. ALL the neighborhood wimmenz love 'em. That's all I'm sayin. :-)
