Potato knishes

½ lb of white potatoes
2 medium white oniond, diced
4 gloves garlic, thinly sliced or pressed
½ tsp white pepper
2 tbsp salt
2 eggs
2 tbsp water
3 tbsp butter
4 ready made flakey pie crusts.
Wax paper
small bowl of water
1 can of butter flavored pam spray

wash and peel potatoes. In a sauce pot place peeled potatoes in pot and cover with water. Add onions, pepper, garlic and salt. Cover pot and boil potatoes until tender.
Drain water, add butter and mash potatoes until smooth.
Place in covered bowl and refrigerate for 3 hrs.
Unroll pie crust and cut 2” x 3” squares. Place cut squares on sheets of wax paper. Covering dough with a damp paper towel (this will keep dough from drying out).
In a small bowl mix the eggs and water until combined.
Take a teaspoon of potatoe filling and place in middle of dough square. Dip index finger in bowl of water and wet all four sides of dough. Fold square over and press edges together. Place on foil covered baking pan. Grease baking pan. Place squares ½ apart. Take egg mixture and brush on top of squares. Bake in a 350 degree oven until golden brown.

Hmmm...didn't know you were a "member of the tribe," Ron, but I guess a recipe for knishes confirms it...but tell me, did ya get this one from your grandma that came over from the "old" country? :-)

Believe it or not, Yes, I'm a card carrying member of the Lumbee Indian tribe!!! And if PROMISES made are kept, we will be finally federally recognized :-)

Don't like knishes. Actually, I do not like most E. European Jewish Food except for Deli sandwiches.

Sephardic food is much better, but then again it's basically Kosher Italian, Greek, and North African style recipes....
