Tried to recreate a baked then fried potato wedge app that EricF's wife whipped up for us when I was down there recently. While not as delicious as Mrs. EricF's treat, it was a decent approximation. Paired it with some chicken dusted in garlic salt and some roasted veggies. Not bad for a Thursday night meal.

Boston Butts were on sale so I spent the morning making sausage; breakfast, Italian, and Cajun Green Onion.
So we just enjoyed some green onion sausage stuffed mushrooms. They mysteriously disappeared before I could get a photo.

Sure thing! It's a pretty easy, case-less sausage to make, and packs a lot of flavor.
- 2 lbs ground pork (mine was roughly 75/25)
- 1 TBsp Tony Chachere's Cajun Seasoning
- 1 TBsp Kinder's Woodfired Garlic Seasoning
- 2 tsp granulated garlic
- 1/2 tsp Cayenne pepper
- 1/2 cup chopped green onion, just the green part.
Mix all ingredients by hand until tacky.
If it's just me eating it I put more Cayenne pepper in it to up the heat.
If you decide to make it I'd love some feedback.
