Looking at spending 3 weeks there next January, hopefully renting a house on the beach and fishing and smoking on a daily basis. Anyone been?

Here's a thread on that very topic:

Honduras is a very poor country, but the people are friendly. Roatan's bread & butter industry is tourism so they want to make sure you enjoy yourself. The local seafood is great, the Flor de Cana rum is cheap, and there are guys on the beach who will sell you the finest in counterfeit Cohibas.
:-)

Beautiful country. If you go to the mainland, go with a guide. They will help with any issues.
