Good Eats>Smoked Rabbit

Today I smoked my 1st rabbit. It was delicious. After some research I also learned that rabbit is VERY healthy. Here is a pic.

I used salt and pepper, Italian dressing with a touch of Steak Sprinkle at the end of the cook sold at www.texasbbqrub.com
Smoked on the Traeger.

There is so little fat on rabbits did this make the meat dry out at all in the smoker? I love to braise them for about an hour and a half they come out nice and tender and are great.

It was not dry at all. I plan on doing another one in the coming weeks, might tweek my recipe a bit and play around with it. Maybe I will braise my next one.

I smoked a squirrel once. No rabbits yet.
