I picked up a couple of different wedges of cheddar last weekend. The first was a sharp cheddar from Ireland which was very nice. The label on the second said it was from England and made with English Ale. It was a little sharper than the Irish cheddar with a sharper bite.
We enjoyed them first with some ground mustard, thin sliced red onion and plain saltine crackers. The beer of choice that day was Abita Springs Andygator.
Everything was excellent.
Then last night for dinner, we decided to just have sandwiches. I started to do a hot pastrami with Swiss but remembered the cheddar. I made a grilled ham and cheese useing the leftover English Ale cheddar with thin sliced deli ham and red onion on sourdough.
WOW!

Not a problem for me. My last checkup two weeks ago had my cholestorol at 147.
